My understanding is the Aztec went through a protein shortage. Modern people like to believe in "sacrifices" for Gods with the animal remains going to waste. Is that true? Even with animal sacrifices they were to pay the religious people, so to speak. Food was very valuable for most of human history. No one had so much that they'd "spill" it down the steps.
