Sweetgreen ran an automated restaurant in Harvard Square a couple of years ago (that shop now closed), if not more. So this has been around a long time. Maybe they've improved it, but my experience was that the machines only hid the kitchen staff from view, who were busy loading, cleaning, and adjusting the machines.
The interior was very nice. My take is, like you say, they're trying to create a high-end experience with the robots more of tech eye-candy than something that would lower prices.
Sort of like EVs, allows us to push all the dirty work out of view.
